Lunch - Crispy Ginger Pork Bowl
HOW TO MAKE:
get your ground pork - I try to buy local if I can!
pre-heat your pan and if you need oil etc in it put it in there otherwise add your meat right to it
with a microplane grate a clove of garlic and a similarly sized piece of ginger right into the pork
give a good couple of shakes of soy sauce and sesame oil to your mixture as well
as that cooks, put on your rice - cook it however you cook your rice. if you have broth (I used beef) then put that in there with or alongside the water
while these babies are cooking, lets do some veg
I sliced radish and red onion/shallot really thinly to do a quick pickle
literally I do not measure anything except with my heart so I do a big pinch of sugar, a good heap of salt, some hearty splashes of vinegar (I used apple cider but use whatever you want) and then top it up with boiling water (I usually make extra to keep in my fridge - you can also add aromatics to this but I was feeling the simple vibes - the veggies will turn it pink which is cute)
slice up your cucumber in a way you like - I enjoy thin strips but whatever feels good; you can honestly use whatever veg you feel like
crack an egg into your pork pan (alternatively you can boil it if you want but I wanted a fried egg)
while the egg cooks get your herbs - I used chives from my garden and cilantro. There are no rules, do what you want! CHOP EM UP!
then when everything is cooked salt and pepper ur meat (i do this at the end so that it doesn’t get dry when cooking but does get crispy)
assemble ur bowl; I do rice and pork at the bottom, then veggies, then egg, the herbs, and then some sesame seeds (I’ve been using black because they are sexy and add a fun contrast)
voila! Enjoy! so easy! done in legit 20 mins!
